Today I made banana spinach muffins with pistachios on top! It may look gross but I assure you it tastes delicious and you can’t even taste the spinach- which makes these muffins so juicy, moist and delicious! They are paleo and vegan friendly!
2 cups of Trader Joe’s almond flour
1 T of coconut flour
1 ½ t of cinnamon
½ t of baking soda
1/4 cup unsweetened applesauce
¼ cup melted raw honey
¼ cup melted organic coconut oil
2 mashed bananas
1 t of vanilla extract
1 T apple cider vinegar
1 cup frozen spinach defrosted
1/4 cup chopped pistachios
Preheat oven to 350. Line with muffin tin
Mix all your dry ingredients in a large bowl. In a small bowl mix in the wet ingredients. Then transfer to the large bowl and mix well. Lastly, mix in the spinach
Poor into muffin tins (spray with oil if needed) Mine were eco friendly so I didn’t have to. Once muffins are filled cut up the walnuts and place a few on top of the muffins. Bake for 35 mins and then let cool and ENJOY!
